Pineapple Rice Pilaf
This pilaf recipe is a great
accompaniment to jerk meat, chicken or fish.
1 1/2 tablespoons butter
1 1/2 cups long-grain white rice
1/2 teaspoon allspice powder
1 can (14 1/2 ounces) reduced sodium,
fat-free chicken broth
1 can (8 ounces) crushed pineapple in
its own juice
1/2 cup toasted slivered almonds
1/2 cup sliced green onions
Salt and pepper, to taste
Melt butter in medium saucepan over
medium heat. Mix in rice and allspice; cook and stir about 5 minutes until rice
is lightly browned. Stir in broth and pineapple with juice. Bring to boil;
reduce heat to low. Cover and simmer 15 minutes. Turn off heat; set aside 5
minutes. Mix in almonds and green onions. Season with salt and pepper.
Preparation Time: 45 minutes
